Let’s Guac and Roll!
This healthy and delicious twist on the classic guacamole recipe is perfect for a summertime fiesta or as a reward after a STARability sports game. Thank you, Sammy and Parker, for providing us with this wonderful recipe!
•1 red onion, chopped
• 1 jalapeño pepper, seeds removed, chopped
•1 1/2 cups of pineapple, chopped
• 3 ripe avocados, peeled and pitted
• 1/4 cup cilantro, chopped
• 1/2 teaspoon pink Himalayan sea salt
• 1 tablespoon lime juice
• Dash of cumin
• Tortilla chips, yellow and blue corn chips for the gluten-free option
Step 1: combine red onion, jalapeño, pineapple, avocados, cilantro, salt, lime juice and cumin in a large bowl.
Step 2: Stir and mix until all ingredients are well- combined.
Step 3: Serve with tortilla chips, vegetables or any of your favorite side snacks!
